2-Ingredient Pumpkin Bread

Using just two ingredients – a box of spice cake mix and a 15-ounce can of pumpkin – you can whip up a treat that captures the essence of autumn in every bite. Ingredients:

One box of spice cake mix

One 15-ounce can of pumpkin

Optional:

Two scoops of vanilla whey protein

Chopped walnuts to taste

Steps:

Preheat the oven to 350f (as prescribed on the box of cake mix)

Grease/butter/spray a loaf pan or muffin tin

Mix cake mix and pumpkin

Pour batter into the pan or tin

Bake Time:

This is the only moderately tricky part because the pumpkin is very wet. If you’re making a loaf (pictured), it will take at least 45 minutes, which means if the top starts to brown too much, cover it with tin foil. Smaller batches, such as muffins, should be checked at 20 minutes.

Bonus:

Because of the wetness issue described above and some requests from my daughter, I have recently begun to add two scoops of vanilla whey protein to my batter with EXCELLENT results! I haven’t tried vegan-based proteins and can’t speak to their results.

Adding the protein thickened the batter slightly and made for a taller, fluffier loaf (again, pictured) when mixed with an electric beater instead of by hand.

Final enhancement

Walnuts! I like walnuts; they’re full of great benefits like providing healthy fats, promoting brain health, and sperm vitality…if you care about that sort of thing. I don’t choose to mix them into the batter but instead sprinkle them on top. It looks nice, they brown up nicely, and it’s easier for walnut haters to pick them off.

I can honestly say that, regardless of season, I always have a can of pumpkin and a box of spice cake in my pantry, and, in a pinch, I can have a great loaf of this delicious bread ready in under an hour.
